Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup finely chopped fresh strawberries (patted dry)

For the cheesecake filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar

Instructions

  1. In a small bowl, mix cream cheese and powdered sugar until smooth. Scoop into small mounds and freeze for 30–40 minutes.
  2. Finely chop and dry strawberries with paper towels.
  3. In a bowl, whisk flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat butter and sugar until fluffy. Add egg and vanilla, mixing well.
  5. Gradually mix in the dry ingredients until combined.
  6. Gently fold in the strawberries.
  7. Scoop dough, flatten in your hand, place frozen cream cheese filling inside, and seal.
  8. Chill the filled dough balls for 30 minutes.
  9. Preheat oven to 350°F (175°C). Place cookies on lined baking sheet.
  10. Bake for 12–14 minutes, until edges are set and centers soft.
  11. Cool on baking sheet before transferring to a wire rack.
