Ingredients

12 Ribeye or New York Strip Steaks

1/4 cup Olive Oil

1/4 cup Soy Sauce

2 tablespoons Worcestershire Sauce

3 cloves Garlic, minced

1 tablespoon Brown Sugar

1 tablespoon Lemon Juice

1 teaspoon Black Pepper

2 tablespoons Butter

2 sprigs Fresh Herbs (parsley, rosemary, or thyme)


Instructions

1. In a bowl or resealable bag, mix olive oil, soy sauce, Worcestershire sauce, garlic, brown sugar, lemon juice, and black pepper until well combined.

2. Add steaks to the marinade and coat thoroughly. Marinate in the refrigerator for at least 1 hour, up to 8 hours.

3. Remove steaks 30 minutes before cooking to let them come to room temperature.

4. Preheat a cast iron skillet over high heat until smoking hot.

5. Lightly oil the skillet, then add the steaks. Sear for 3–4 minutes per side until a crust forms.

6. Reduce heat and add butter, herbs, and extra garlic. Baste the steak with melted butter for 1–2 minutes.

7. Remove steaks from skillet, tent with foil, and let rest for 5 minutes.

8. Slice against the grain, garnish with fresh herbs, and serve hot.


Notes

Don’t skip the resting time — it makes a big difference in juiciness.

For extra flavor, spoon the garlic butter over the steak continuously during the last minute of cooking.

Use a meat thermometer to check doneness: 130°F for medium-rare, 140°F for medium.
