Ingredients
2 boneless skinless chicken breasts
1 tablespoon soy sauce
1 teaspoon sesame oil
1 teaspoon chili paste or Sriracha
1/2 teaspoon garlic powder
1 tablespoon sesame oil
3 garlic cloves minced
1 inch fresh ginger grated
2 tablespoons soy sauce
1 tablespoon miso paste
1 tablespoon chili oil
3 cups chicken broth
1 cup unsweetened coconut milk or heavy cream
1 teaspoon sugar
Salt to taste
2 packs ramen noodles (no seasoning packet)
2 large eggs
2 green onions sliced
Toasted sesame seeds
Black sesame seeds (optional)
Chili flakes (optional)
Instructions
1. In a bowl, combine soy sauce, sesame oil, chili paste, and garlic powder. Marinate chicken for at least 20 minutes or overnight.
2. Heat a skillet over medium-high and cook chicken 5–6 minutes per side. Rest, then slice thinly.
3. Bring a saucepan of water to boil. Boil eggs for 6–7 minutes, then place in an ice bath. Peel and halve.
4. In a large pot, heat sesame oil. Add garlic and ginger. Sauté for 1 minute until fragrant.
5. Add soy sauce, miso paste, and chili oil. Stir well. Pour in broth and simmer gently. Add coconut milk and sugar. Simmer for 10 minutes.
6. Cook ramen noodles in separate pot per package directions. Drain.
7. Assemble bowls with noodles, broth, chicken, egg halves, green onions, sesame seeds, and optional chili flakes.
Notes
Marinating the chicken ensures deep flavor—don’t skip it!
For best results, don’t boil the coconut milk—keep the broth at a gentle simmer.
Separate storage of noodles and broth keeps leftovers tasting fresh.
