Ingredients
4 large eggs
2 tablespoons whole milk or heavy cream
2 tablespoons chopped green onions
4 slices cooked bacon, ham, or Spam
1/3 cup mayonnaise
1 to 2 chipotle peppers in adobo sauce, chopped
1 teaspoon lime juice
2 English muffins, split
1 tablespoon butter
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a small bowl, stir together the mayonnaise, chopped chipotle peppers, and lime juice until smooth to make the chipotle mayo. Set it aside.
2. Cook the bacon, ham, or Spam in a skillet over medium heat until browned and crisp around the edges, then transfer to a paper towel-lined plate.
3. Spread the cut sides of the English muffins with butter and toast them in a skillet or toaster until golden and crisp.
4. Crack the eggs into a bowl, add the milk or cream, salt, and black pepper, and whisk until fully combined.
5. Melt the butter in a nonstick skillet over medium-low heat, pour in the eggs, and cook gently while stirring until soft, fluffy curds form. Stir in the green onions at the end.
6. Spread some chipotle mayo on the bottom half of each toasted English muffin.
7. Layer the scrambled eggs over the muffin bottoms, then add the cooked meat on top.
