Ingredients
For the Blackened Chicken:
- 2 large boneless, skinless chicken breasts
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp cayenne pepper (adjust to taste)
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 2 tbsp olive oil
For the Parmesan Garlic Linguine:
- 12 oz linguine pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced or grated
- 1 1/4 cups heavy cream
- 1 cup freshly grated parmesan cheese
- Salt and pepper to taste
- 1/4 cup reserved pasta water (if needed)
- 1 tbsp lemon juice (optional)
Garnish:
- Fresh parsley, chopped
- Extra parmesan or chili flakes (optional)
Instructions
- Pat the chicken dry and coat with olive oil. Mix all spices and rub onto the chicken.
- Bring a large pot of salted water to boil. Cook linguine until al dente. Reserve 1/4 cup of pasta water.
- Heat a cast iron skillet over medium-high heat with olive oil. Sear chicken for 4–5 minutes per side until blackened and cooked through.
- Remove chicken and let rest. In the same pan, reduce heat to medium-low and melt butter.
- Sauté garlic until fragrant. Add cream and simmer 2–3 minutes.
- Stir in parmesan cheese until smooth. Season with salt and pepper.
- Toss in drained linguine. Add pasta water and lemon juice if needed.
- Slice chicken and serve on top of the pasta. Garnish as desired.
