Ingredients

  • 1 cup yellow cornmeal (medium grind)
  • 1/2 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • 3/4 cup buttermilk
  • 1 large egg
  • 1/2 cup corn kernels (fresh, frozen, or canned, drained)
  • 3/4 cup shredded cheddar cheese
  • 2 tbsp chopped chives or green onions
  • Optional: 1 small jalapeño, finely diced or a few dashes of hot sauce

  • Oil for frying (vegetable or canola)

  6. Heat oil in a deep skillet or saucepan to 350°F (175°C).
  7. Fry poppers in batches for 2–3 minutes, turning to brown evenly.
  8. Remove with slotted spoon and drain on paper towels.
  9. Serve warm with your favorite dip.
