Ingredients

1 cup unsalted butter, softened

1 1/4 cups light brown sugar, packed

1/2 cup granulated sugar

3 large eggs

2 teaspoons vanilla extract

1/2 teaspoon orange extract

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground ginger

3/4 cup dried cranberries

3/4 cup white chocolate chips

8 oz cream cheese, softened

1/3 cup unsalted butter, softened

2 cups powdered sugar

1/2 teaspoon vanilla extract

1/2 teaspoon orange zest

1/3 cup dried cranberries, chopped

1/4 cup white chocolate, melted for drizzling

Instructions

1. Preheat the oven to 350°F (175°C) and line a 9×13-inch metal baking pan with parchment paper. Lightly grease.

2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in the eggs one at a time, then add vanilla and orange extract.

4. In another bowl, whisk together flour, baking powder, salt, and ground ginger.

5. Add the dry mixture to the wet ingredients, mixing just until combined.

6. Fold in dried cranberries and white chocolate chips gently using a spatula.

7. Spread the batter evenly into the prepared pan and smooth the top.

8. Bake for 22–25 minutes or until golden and a toothpick comes out with moist crumbs.

9. Cool completely in the pan on a wire rack.

10. Beat the cream cheese and butter together until smooth and creamy.

11. Gradually add powdered sugar and beat until fluffy. Mix in vanilla and orange zest.

12. Frost the cooled bars evenly with the cream cheese mixture.

13. Sprinkle chopped cranberries over the frosting and drizzle with melted white chocolate.

14. Chill for 30–45 minutes before slicing into triangles or bars with a sharp knife.

Notes

Always allow the bars to cool fully before frosting to prevent melting.

Use high-quality white chocolate for smoother melting and better taste.

For perfect slices, chill the bars slightly and clean your knife between each cut.
