Ingredients
- 1 ¾ cups (220g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- ⅔ cup (130g) brown sugar
- 2 large eggs (room temp)
- ½ cup (120ml) vegetable oil
- ¼ cup (60ml) milk (dairy or non-dairy)
- 1 tsp vanilla extract
- 1½ cups freshly grated carrots (about 2 medium)
Optional Add-ins:
- ½ cup chopped walnuts or pecans
- ⅓ cup raisins or chopped dates
- ¼ cup shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk brown sugar, eggs, oil, milk, and vanilla until smooth.
- Fold in grated carrots to the wet mixture.
- Add wet ingredients to the dry, stirring gently until just combined.
- Fold in any optional mix-ins (nuts, raisins, etc.).
- Fill muffin cups about ¾ full using a scoop or measuring cup.
- Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
- Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
