Ingredients
For the Snickerdoodle Base:
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Apple Pie Filling:
- 2 large apples (Granny Smith or Honeycrisp), peeled, cored, diced
- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 1 tablespoon all-purpose flour
For the Crumb Topping:
- 1/2 cup all-purpose flour
- 1/4 cup light brown sugar, packed
- 1 teaspoon cinnamon
- 1/4 cup unsalted butter, cold and cubed
Optional Cinnamon-Sugar Sprinkle:
- 1 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 or 9×9 inch pan with parchment paper.
- Make the base: Cream together butter and sugar. Beat in the egg and vanilla. Add flour, baking powder, and salt; mix until a soft dough forms. Press evenly into the bottom of the prepared pan.
- Make the apple filling: Toss diced apples with sugar, cinnamon, lemon juice, and flour. Spread over the snickerdoodle base.
- Make the crumb topping: Mix flour, brown sugar, and cinnamon. Cut in the cold butter until crumbly. Sprinkle over the apples.
- Optional: Mix cinnamon and sugar. Sprinkle over the top for added flavor.
- Bake for 35–40 minutes, until golden and center is set.
