Ingredients

  • 3 cups shredded cooked chicken (rotisserie works great)
  • 1 (15 oz) can diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 2 tablespoons taco seasoning
  • 6 large flour tortillas
  • 1 1/2 cups enchilada sauce (red or green)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet, heat oil over medium heat. Sauté chopped onions until soft (about 5 minutes). Add garlic and cook for 1 more minute.
  3. Stir in diced tomatoes and taco seasoning. Simmer for 5-7 minutes until thickened. Add shredded chicken and toss to coat. Remove from heat.
  4. Warm tortillas slightly to make them more pliable. Spoon chicken filling into each tortilla, sprinkle with some cheese, and roll tightly.
