Ingredients

For the Chicken Filling:

  • to 3 cups cooked shredded chicken
  • 1 tbsp olive oil (if cooking raw chicken)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • ½ cup salsa
  • ½ cup canned black beans (optional)
  • ½ cup corn kernels (optional)

For Assembly:

  • 68 large flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1½ cups red enchilada sauce

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Diced tomatoes
  • Avocado or guacamole
  • Sliced jalapeños
  • Lime wedges

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. In a skillet over medium heat, sauté diced onion in olive oil until soft (3–4 min). Add garlic, spices, salt, and pepper. Stir until fragrant.
  3. Mix in shredded chicken, salsa, beans, and corn. Heat through, then set aside.
  4. Warm tortillas slightly to make them easier to roll.
  5. Spoon chicken filling onto tortillas, sprinkle with cheese, and roll tightly. Place seam-side down in the baking dish.
  6. Pour enchilada sauce over burritos and top with remaining cheese.
  7. Cover loosely with foil and bake for 20–25 minutes. Uncover for the last 5 minutes to brown the cheese.
