Ingredients
For the Chicken and Rice
- 1 lb chicken breast, diced
- 1 cup long-grain rice
- 2 cups chicken broth
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
For the Chipotle BBQ Sauce
- 1/2 cup BBQ sauce (preferably smoky-flavored)
- 1 tbsp chipotle peppers in adobo sauce, minced
- 1 tbsp honey (optional)
- 1 tbsp apple cider vinegar
Instructions
- Prepare the Chicken
- Heat 2 tbsp olive oil in a large non-stick or cast-iron skillet over medium-high heat.
- Add diced chicken breast, season with salt, pepper, garlic powder, and onion powder.
- Cook for 6–8 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken and set aside.
- Cook the Rice
- In the same skillet, add the rice and toast for about 2 minutes until lightly golden.
- Pour in the chicken broth and stir well. Bring to a boil, reduce heat to low, cover, and simmer for 15–18 minutes until rice is cooked.
- Prepare the Chipotle BBQ Sauce
- Combine BBQ sauce, minced chipotle peppers, honey, and apple cider vinegar. Mix well and set aside.
- Combine and Finish
- Add cooked chicken back to the skillet with the rice.
- Pour the prepared BBQ sauce over the mixture and stir until evenly coated.
- Simmer for an additional 2–3 minutes.
