Ingredients
1.5 lbs chicken breast or tenderloins
1 ½ tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
Salt & black pepper to taste
1 tbsp olive oil
½ cup crumbled feta cheese
2 tbsp tahini
1 clove garlic minced
1 tbsp lemon juice
1–2 tbsp cold water
1 tbsp plain Greek yogurt
Freshly ground black pepper
2 cups fingerling or baby Yukon potatoes halved
1 ½ cups Brussels sprouts trimmed and halved or shaved
1 ½ tbsp olive oil
½ tsp smoked paprika
Salt & pepper to taste
Optional garnish chopped parsley & crushed pistachios
Instructions
1. Pat the chicken dry and toss with olive oil, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Set aside to marinate.
2. Preheat oven to 425°F (220°C). Toss halved potatoes and Brussels sprouts in olive oil, smoked paprika, salt, and pepper. Spread evenly on a parchment-lined baking sheet.
3. Roast the vegetables for 25–30 minutes, flipping halfway, until golden and crispy.
4. In a food processor, blend feta, tahini, garlic, lemon juice, yogurt, and cold water until creamy. Season with pepper to taste.
5. Heat a skillet over medium-high. Sear the chicken 4–5 minutes per side until fully cooked. Let rest for 5 minutes.
6. To serve, spoon feta-tahini cream onto the plate, arrange chicken slices beside it, and top with roasted veggies.
7. Garnish with parsley and crushed pistachios.
