Slow Cooker Steak and Cheddar Potato Casserole is a comforting, hearty dish featuring tender chunks of steak, buttery potatoes, and melty cheddar cheese, all simmered together in a rich, savory broth. Ingredients
- 1.5 to 2 lbs steak (sirloin, chuck, or round), cubed
- 2 lbs Yukon Gold or Russet potatoes, peeled and diced
- 1 cup shredded sharp cheddar cheese
- 1 cup beef broth
- 1 small onion, chopped
- 2 cloves garlic, minced (or 1 tsp garlic powder)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 1 tbsp olive oil or butter (for searing, optional)
- Fresh parsley, chopped (optional garnish)
Instructions
- Cut steak into bite-sized cubes. If desired, sear the pieces in a skillet with olive oil or butter until browned.
- Peel and dice the potatoes into even chunks.
- In the slow cooker, layer steak on the bottom. Add chopped onion and garlic, then layer the potatoes on top.
- Pour in beef broth and season with salt, pepper, and paprika.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until steak is tender and potatoes are cooked through.
- In the last 10–15 minutes of cooking, stir in shredded cheddar cheese. Cover and allow cheese to melt.
- Stir gently, taste and adjust seasoning if needed.
- Garnish with chopped parsley before serving.
