Ingredients
1 lb Italian sausage (mild or spicy)
1 1/2 cups dry green or brown lentils, rinsed and drained
4 cups low-sodium chicken broth
2 cups water
1 medium onion, diced
3 carrots, peeled and chopped
2 celery stalks, chopped
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes, with juice
1 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp smoked paprika
1/4 tsp crushed red pepper flakes (optional)
1 bay leaf
Salt and freshly ground black pepper, to taste
2 tbsp olive oil (if browning sausage)
Chopped fresh parsley, for garnish (optional)
Grated Parmesan cheese, for serving (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Remove sausage from casings and crumble into the pan. Brown for 5–6 minutes until golden.
2. While sausage cooks, dice onion, carrots, and celery. Mince the garlic.
3. Rinse lentils thoroughly under cold water using a mesh sieve.
4. Add onion, carrots, celery, garlic, lentils, sausage, diced tomatoes (with juice), broth, water, thyme, oregano, paprika, red pepper flakes, and bay leaf into the slow cooker. Stir gently.
5. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until lentils are tender.
6. Season with salt and pepper to taste. Remove bay leaf before serving.
7. Serve hot, garnished with parsley and Parmesan if desired.
