Ingredients

34 pounds chuck roast

3 large yellow onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 tablespoon Worcestershire sauce

2 tablespoons balsamic vinegar

2 tablespoons butter

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon cornstarch (optional)


Instructions

1. Season the chuck roast generously with salt and pepper on all sides.

2. Heat a skillet over medium-high heat and sear the roast until browned on all sides.

3. Remove the roast and melt butter in the same skillet. Add sliced onions and cook until caramelized.

4. Add minced garlic and cook for about one minute until fragrant.

5. Place the roast in the slow cooker and top with the caramelized onions and garlic.

6. Pour beef broth, Worcestershire sauce, balsamic vinegar, and thyme around the roast.

7. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours until fork-tender.

8. Optional: Mix cornstarch with water and stir into the juices to thicken the sauce.

9. Shred the beef with two forks and mix with the onions and sauce before serving.


Notes

For deeper flavor, deglaze the skillet with a splash of red wine before adding the onions to the slow cooker.

Let the roast rest for about 10 minutes before shredding to keep it juicy.

Add potatoes or carrots halfway through cooking if you want a complete one-pot meal.
