Ingredients

3 pounds chuck roast

4 cups beef broth

1 large yellow onion, thinly sliced

4 cloves garlic, minced

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 bay leaf

6 slices provolone cheese

6 French rolls or hoagie buns

2 tablespoons butter (optional, for toasting)

1 tablespoon chopped fresh parsley (optional, for garnish)


Instructions

1. Trim excess fat from the chuck roast. Slice onion and mince garlic.

2. Add onion and garlic to the bottom of a slow cooker. Place roast on top.

3. Pour in beef broth, Worcestershire sauce, soy sauce, and add bay leaf.

4. Cover and cook on low for 8–10 hours (or high for 4–5 hours) until meat is tender.

5. Remove beef, shred with two forks, and return it to the slow cooker.

6. Skim excess fat from au jus and keep it warm.

7. Split rolls and butter them if desired. Toast in the oven or pan until golden.

8. Pile beef onto each roll, top with provolone, and broil until cheese is melted.

9. Sprinkle with parsley if using.

10. Serve with warm au jus on the side for dipping.


Notes

Searing the roast before slow cooking adds an extra layer of flavor.

Use a fat separator to keep the au jus rich but not greasy.

Always toast the bread to prevent sogginess when dipping.
