Ingredients

1.5 pounds boneless skinless chicken breasts or thighs

1 can (28 oz) crushed tomatoes

4 cups chicken broth

4 cloves garlic, minced

1 medium onion, chopped

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 cup heavy cream

3/4 cup freshly grated Parmesan cheese

1 cup shredded mozzarella cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Place the chicken in the bottom of the slow cooker.

2. Add crushed tomatoes, chicken broth, garlic, onion, basil, oregano, salt, pepper, and red pepper flakes.

3. Stir gently to combine all ingredients.

4. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.

5. Remove the chicken, shred it with forks, and return it to the soup.

6. Stir in the heavy cream and Parmesan cheese.

7. Cook for an additional 15–20 minutes on low, uncovered.

8. Top with shredded mozzarella and chopped parsley before serving.


Notes

Use freshly grated Parmesan for the smoothest melt and best flavor.

Add cream at the end to avoid curdling or separating.

Rotisserie chicken can be used to save time and shorten the cooking process.
