Ingredients
2 pounds beef chuck roast or stew meat
1 large yellow onion, chopped
3 cloves garlic, minced
2 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 bay leaf
2 tablespoons cornstarch
2 tablespoons water
Salt, to taste
Black pepper, to taste
1 tablespoon butter (optional)
Instructions
1. Optional: In a skillet over medium-high heat, sear beef chunks until browned on all sides. Transfer to slow cooker.
2. Add chopped onion and minced garlic on top of the beef. Sprinkle in thyme, salt, pepper, and add the bay leaf.
3. In a bowl, mix beef broth, Worcestershire sauce, and soy sauce. Pour over the beef mixture in the slow cooker.
4. Cover and cook on low for 7–8 hours or high for 4–5 hours until the beef is tender.
5. Whisk cornstarch and water together, then stir into the slow cooker. Cook uncovered on high for 30 minutes or until gravy thickens.
6. Remove bay leaf. Stir in butter, if using. Adjust seasoning as needed and serve hot.
