Ingredients
1 lb large shrimp, peeled and deveined
10 oz cheese tortellini
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1 cup fresh spinach (optional)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
Instructions
1. Bring a pot of salted water to a boil. Cook the tortellini according to package instructions. Drain and set aside, reserving 1 cup of pasta water.
2. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add shrimp, season with salt, pepper, and Italian seasoning. Cook 2–3 minutes per side until pink and cooked through. Remove and set aside.
3. In the same skillet, add remaining butter. Stir in garlic and sauté for 1 minute until fragrant.
4. Pour in heavy cream. Reduce heat to medium and stir for 3–5 minutes until the sauce thickens slightly.
5. Stir in Parmesan cheese until melted and creamy. Add spinach (if using) and cook until wilted.
6. Add tortellini to the sauce and gently stir to coat. Use reserved pasta water to loosen sauce if needed.
7. Return shrimp to the skillet, mix well, and serve hot with extra Parmesan and herbs on top.
Notes
Use freshly grated Parmesan to avoid clumping in the sauce.
Don’t overcook the shrimp—they only need a few minutes per side.
A splash of lemon juice just before serving brightens the entire dish.
