Ingredients

2 puff pastry sheets

612 cooked breakfast sausage links

6 large eggs

1/4 cup milk

1 cup shredded cheddar cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg (for egg wash)

1 tablespoon water (for egg wash)


Instructions

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Cook sausage links in a skillet over medium heat until browned and fully cooked. Set aside to cool.

3. Whisk eggs with milk, salt, and pepper. Scramble in a skillet until just set and slightly soft. Let cool.

4. Roll out thawed puff pastry on a floured surface and cut into 6 rectangles per sheet.

5. On each rectangle, add scrambled eggs, 1 sausage link, and shredded cheese.

6. Fold the pastry over the filling and seal the edges. Place seam-side down on the baking sheet.

7. Beat 1 egg with 1 tablespoon water and brush the tops of the roll-ups with the egg wash.

8. Bake for 18–22 minutes, or until golden brown and puffed.

9. Cool slightly before serving. Enjoy!


Notes

Make sure the puff pastry stays cold before baking for the flakiest texture.

Let the filling cool slightly to prevent soggy pastry.
