Ingredients

1 cup salmon (canned or cooked and flaked)

1 large egg

1/2 cup breadcrumbs

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 clove garlic, minced

2 tablespoons green onions, finely chopped

1 tablespoon lemon juice

1 tablespoon parsley, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil (for frying)

1/2 cup mayonnaise

1 tablespoon lemon juice

1 teaspoon lemon zest

1 clove garlic, minced or grated

1 tablespoon fresh dill or parsley, chopped

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Place the salmon in a bowl. Remove bones and skin if using canned.

2. Add egg, breadcrumbs, mayonnaise, mustard, garlic, green onions, lemon juice, parsley, salt, and pepper. Mix gently.

3. Form into 6 to 8 patties about 2.5–3 inches wide.

4. Heat oil in a skillet over medium heat.

5. Fry patties for 3–4 minutes per side until golden and crispy.

6. Drain on paper towels and keep warm.

7. In a separate bowl, combine all sauce ingredients: mayonnaise, lemon juice, zest, garlic, herbs, salt, and pepper.

8. Mix well and taste for seasoning.

Notes
