Description

A delicious and elegant toast featuring whipped ricotta topped with sweet, jammy roasted strawberries and finished with a drizzle of honey and fresh mint. Perfect for brunch or a light dessert.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 teaspoon honey (plus more for drizzling)
  • Pinch of salt
  • 1 cup whole milk ricotta cheese
  • 4 slices of brioche, sourdough, or country bread
  • Olive oil or butter (for brushing the bread)
  • Fresh mint leaves (for garnish)
  • Optional: black pepper or flaky salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss the strawberries with 1 tsp honey and a pinch of salt. Roast on a parchment-lined baking sheet for 20–25 minutes. Let cool slightly.
  3. In a bowl, whip the ricotta with a pinch of salt using a mixer or whisk until light and fluffy.
  4. Brush bread slices with olive oil or butter and toast until golden and crisp.
  5. Spread whipped ricotta over the toast.
  6. Spoon roasted strawberries on top and drizzle with honey.
  7. Garnish with fresh mint leaves. Add a crack of black pepper or pinch of flaky salt if desired.
  8. Serve immediately.
