  • 4 bone-in, skin-on chicken legs or thighs
  • 1/3 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 1/2 pounds baby potatoes, halved
  • 1 tablespoon fresh thyme or rosemary

Instructions

  1. Prepare the Marinade: In a bowl, whisk together balsamic vinegar, olive oil, honey, Dijon mustard, soy sauce, minced garlic, salt, black pepper, and red pepper flakes.
  2. Marinate the Chicken: Place the chicken in a large bowl or zip-top bag, pour the marinade over, and toss to coat. Let it marinate for at least 30 minutes (or up to 8 hours in the fridge).
  3. Preheat the Oven: Set your oven to 400°F (200°C).
  4. Arrange in Baking Dish: Place baby potatoes in a baking dish, drizzle with olive oil, and season with salt and pepper. Lay the marinated chicken on top and pour any leftover marinade over. Sprinkle fresh thyme or rosemary.
