Ingredients

2 cups cooked shredded chicken

1 can cream of chicken soup (10.5 oz)

1 cup sour cream

1 1/2 cups shredded cheddar cheese, divided

1 1/2 sleeves Ritz crackers, crushed (about 30 crackers)

1/2 cup unsalted butter, melted

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, mix together the shredded chicken, cream of chicken soup, sour cream, garlic powder, onion powder, half the shredded cheddar cheese, salt, and pepper.

3. Spread the chicken mixture evenly into the prepared baking dish.

4. In a separate bowl, combine crushed Ritz crackers with melted butter and stir until coated.

5. Sprinkle the remaining cheddar cheese on top of the casserole.

6. Evenly spread the buttery cracker crumbs over the cheese layer.

7. Bake uncovered for 25–30 minutes, until bubbly and golden on top.

8. Let the casserole rest for 5 minutes before serving.

9. Garnish with chopped parsley if desired.

10. Serve warm and enjoy!

Notes

If preparing ahead of time, wait to add the cracker topping until right before baking.

You can substitute plain Greek yogurt for sour cream to lighten it up.

Add a cup of frozen peas or chopped broccoli to the mix for extra veggies.
