Ingredients

15 ounces pumpkin puree

0.75 cup granulated sugar

0.5 cup brown sugar

12 ounces evaporated milk

2 large eggs

1 tablespoon pumpkin pie spice

1 teaspoon vanilla extract

0.25 teaspoon salt

0.75 cup all-purpose flour

0.75 cup old-fashioned oats

0.5 cup brown sugar (for topping)

0.5 cup melted butter

1 pinch salt (for topping)

Instructions

1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

2. In a large bowl, whisk pumpkin puree, granulated sugar, 1/2 cup brown sugar, evaporated milk, eggs, pumpkin pie spice, vanilla, and salt.

3. Pour the pumpkin mixture into the prepared baking dish and spread evenly.

4. In a separate bowl, combine oats, flour, 1/2 cup brown sugar, and a pinch of salt.

5. Pour in melted butter and mix until the topping is crumbly.

6. Evenly sprinkle the topping over the pumpkin mixture.

7. Bake for 45–50 minutes or until the topping is golden and the filling is set with a slight jiggle.

8. Let cool at least 20–30 minutes before serving.

9. Serve warm with ice cream or whipped cream.

Notes

Letting it cool before serving helps the filling set and improves flavor.

You can add chopped pecans to the topping for extra crunch and nuttiness.

Store leftovers in the fridge and reheat for a warm treat the next day.
