Ingredients
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
3/4 cup eggnog
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup powdered sugar (for glaze)
1–2 tablespoons eggnog (for glaze)
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, whisk together flour, sugar, baking powder, salt, and nutmeg.
3. In a separate bowl, whisk the eggnog, oil, egg, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry and stir until just combined. Do not overmix.
5. Pour batter into the prepared pan and smooth the top.
6. Bake for 45 to 55 minutes, or until a toothpick inserted comes out clean.
7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
8. Prepare the glaze by mixing powdered sugar with enough eggnog to make a pourable glaze.
9. Drizzle glaze over cooled bread and let it set before slicing.
Notes
Let the bread cool fully before glazing for a cleaner look and better texture.
You can add 1/2 cup chopped pecans or white chocolate chips for added richness.
Use full-fat eggnog for the best moisture and flavor balance.
