Ingredients
1 cup pumpkin purée
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
1 cup semisweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment or lightly grease.
2. In a large bowl, whisk together pumpkin purée, brown sugar, granulated sugar, egg, oil, and vanilla.
3. In a separate bowl, mix flour, baking soda, pumpkin pie spice, and salt.
4. Fold the dry ingredients into the wet until just combined—don’t overmix.
5. Stir in most of the chocolate chips, saving some for topping.
6. Spread batter evenly into prepared pan.
7. Sprinkle remaining chocolate chips on top.
