Ingredients

For the Cake:

  • 1 cup shelled pistachios (unsalted)
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ½ cup Greek yogurt or sour cream

For the Frosting:

  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Optional Toppings:

  • Chopped pistachios
  • Honey drizzle or lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 or 9×9 inch pan.
  2. Finely grind pistachios in a food processor—don’t overprocess.
  3. In a bowl, whisk together ground pistachios, flour, baking powder, baking soda, and salt.
  4. In a separate bowl, cream butter, granulated sugar, and brown sugar until fluffy.
  5. Beat in eggs one at a time. Add vanilla.
  6. Mix in yogurt and milk until smooth.
  7. Gradually add dry ingredients; mix until just combined.
  8. Pour batter into the pan and smooth top.
  9. Bake for 28–34 minutes. Let cool completely on a wire rack.
  10. Make frosting: Beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth.
  11. Frost cooled cake and garnish with chopped pistachios or other toppings.
