Ingredients
1.5 lbs chicken thighs or breasts
1 1/2 cups all-purpose flour
2 tsp baking powder
3/4 cup whole milk
4 tbsp butter
2 carrots, diced
2 celery stalks, diced
1 medium yellow onion, diced
2 cloves garlic, minced
6 cups chicken broth
2 tbsp fresh parsley, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Melt butter in a large pot over medium heat. Add diced onions, carrots, and celery. Cook until softened, about 5–7 minutes. Stir in garlic and cook 1 more minute.
2. Add chicken and pour in chicken broth. Season with salt and pepper. Bring to a gentle boil, reduce heat, and simmer for 20 minutes.
3. In a bowl, mix flour, baking powder, and a pinch of salt. Add milk and melted butter. Stir until just combined to form a sticky dough.
4. Remove chicken, shred with forks, and return to the pot.
5. Drop spoonfuls of dough into simmering soup. Cover and cook for 15 minutes without lifting the lid.
6. Stir gently. Taste and adjust seasoning. Sprinkle with fresh parsley and serve warm.
Notes
Do not lift the lid while the dumplings are steaming; the steam is crucial for fluffy texture.
Use rotisserie chicken to cut down cooking time.
Dumpling dough should be thick but not dry; adjust milk if needed.
