Ingredients

1 cup unsalted butter, room temperature

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon peppermint extract

2 ¾ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter (for frosting)

2 ½ cups powdered sugar

23 tablespoons heavy cream or milk

½ teaspoon peppermint extract (for frosting)

12 drops red or pink food coloring (optional)

½ cup crushed peppermint candies


Instructions

1. Cream together the butter and sugar in a large bowl until light and fluffy.

2. Add the eggs one at a time, mixing well after each, then stir in vanilla and peppermint extracts.

3. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix dry ingredients into the butter mixture.

4. Cover and chill the dough in the refrigerator for at least 1 hour.

5. Preheat oven to 350°F (175°C). Roll dough to ¼ inch thickness and cut into rounds.

6. Bake for 8–10 minutes, until edges just begin to turn golden.

7. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

8. Beat butter for frosting until smooth. Gradually add powdered sugar, cream, peppermint extract, and food coloring. Beat until fluffy.

9. Frost cooled cookies generously.

10. Sprinkle crushed peppermint candies on top immediately.


Notes

Always chill your dough for at least 1 hour to keep the cookies from spreading.

Use crushed candy canes immediately after frosting so they stick.

Let cookies cool completely before frosting to avoid melting.
