Ingredients
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup M&Ms (Peanut Butter or Regular Peanut)
1/4 cup mini chocolate chips or chopped peanuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
2. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar using an electric mixer for about 2–3 minutes until light and fluffy.
3. Add in the egg and vanilla extract. Beat until well combined.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture. Mix until just combined—avoid overmixing.
6. Fold in the M&Ms (save a few to press on top later). If using chocolate chips or chopped peanuts, add them now.
7. Scoop dough into 1.5 tbsp-sized balls using a cookie scoop. Space them 2 inches apart on the prepared baking sheets. Press extra M&Ms on top.
8. Bake for 9–11 minutes until the edges are lightly golden and the centers are still soft.
9. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire cooling rack.
