Description

Crispy, golden, and loaded with flavor, these Parmesan Roasted Potatoes are the perfect side dish for any occasion. Coated in olive oil, garlic, and a generous layer of Parmesan, they’re roasted cut-side down to develop a deliciously cheesy crust. Easy to make and even easier to love, they go with everything from roasted chicken to steak, and reheat beautifully in the oven or air fryer.


Ingredients

1.5 pounds baby Yukon Gold potatoes

2 tablespoons olive oil

1/2 cup freshly grated Parmesan cheese

2 cloves garlic, minced (or 1/2 teaspoon garlic powder)

3/4 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley

1/4 cup cooked crumbled bacon (optional)


Instructions

1. Preheat the oven to 400°F (200°C).

2. Wash and dry the potatoes, then slice them in half lengthwise.

3. In a large bowl, toss the potatoes with olive oil, garlic, salt, and pepper until well coated.

4. Add the grated Parmesan and toss again to distribute evenly.

5. Press any loose cheese onto the cut side of the potatoes.

6. Arrange the potatoes cut-side down on a parchment-lined baking sheet.

7. Roast for 35 to 40 minutes, until the bottoms are golden and crispy and the insides are tender.

8. Remove from the oven and sprinkle with fresh parsley and bacon (if using).

9. Serve immediately while hot and crisp.


Notes

These potatoes are best served fresh, but can be reheated in an oven or air fryer to revive their crispiness. They pair beautifully with meats, eggs, and light salads.
