1 lb ground beef

1 packet taco seasoning

1/2 cup water

1/2 small onion, finely chopped

1/2 cup canned diced tomatoes with green chiles, drained

10 crunchy taco shells

2 cups shredded cheese

2 tbsp olive oil

Fresh cilantro or green onions for garnish

Sour cream, salsa, or guacamole for serving


Instructions

1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook for 2–3 minutes until soft.

2. Add ground beef and cook until browned, breaking it apart as it cooks (about 7–9 minutes). Drain excess grease.

3. Stir in taco seasoning and water. Simmer for 4–5 minutes until thickened.

4. Mix in drained diced tomatoes with green chiles and cook for an additional 2 minutes.

5. Preheat oven to 375°F (190°C). Stand taco shells upright in a baking dish.

6. Add a layer of shredded cheese to the bottom of each shell.

7. Spoon in the seasoned beef mixture, then top with more cheese.

8. Bake for 10–12 minutes until the cheese is melted and shells are golden.

9. Garnish with fresh cilantro or green onions.

10. Serve hot with sour cream, salsa, or guacamole.
