Ingredients

  • 2 cups chicken broth
  • 12 oz rotini or penne pasta
  • 1 cup heavy cream
  • 1 lb boneless, skinless chicken breasts (diced)
  • ½ cup buffalo sauce
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Chopped fresh parsley or green onions (optional, for garnish)
  • Extra buffalo sauce (optional, for drizzling)

Instructions

  1. Cook the Chicken: Heat olive oil over medium-high heat in a large non-stick skillet. Add diced chicken, season with salt and pepper, and cook for 6–8 minutes until golden brown and cooked through. Remove and set aside.
  2. Prepare the Sauce and Pasta: In the same skillet, add chicken broth, heavy cream, buffalo sauce, and ranch seasoning mix. Stir well and bring to a simmer over medium heat.
  3. Cook the Pasta: Add pasta to the skillet, stirring to coat. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most of the sauce is absorbed.
  4. Add Chicken and Cheese: Return cooked chicken to the skillet. Add cheddar cheese and stir until melted and creamy. Adjust seasoning to taste.
  5. Serve: Let rest for a few minutes to thicken. Garnish with parsley or green onions if desired. Serve hot and enjoy!
