2 tablespoons olive oil

1 small yellow onion, finely chopped

4 garlic cloves, minced

1 tablespoon tomato paste

1 can (14 oz) diced tomatoes

2 cans (15 oz each) butter beans, drained and rinsed

1/2 cup vegetable broth

1/4 cup heavy cream or full-fat coconut milk (optional)

1/3 cup grated Parmesan or vegan cheese

1 teaspoon dried thyme or a few sprigs of fresh thyme

Handful of fresh basil or parsley, chopped

Instructions

1. Heat olive oil in a large Dutch oven or deep skillet over medium heat. Add chopped onions and cook until soft and translucent, about 5 minutes.
