Ingredients
- 2 large chicken breasts, diced
- 12 oz Andouille sausage, sliced
- 12 oz elbow macaroni
- 2 cups heavy cream
- 2 cups chicken broth
- 2 cups cheddar cheese, shredded (preferably freshly grated)
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning (adjust to taste)
- 3 cloves garlic, minced
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Cook the Sausage and Chicken: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sliced sausage and cook until browned (4–5 minutes). Remove and set aside. In the same skillet, add diced chicken, season with Cajun seasoning, and cook until browned and cooked through (5–7 minutes). Remove and set aside.
- Build the Sauce: Add more olive oil if needed. Sauté garlic for about 30 seconds until fragrant. Pour in chicken broth, heavy cream, and additional Cajun seasoning. Stir well and bring to a gentle simmer.
- Cook the Pasta: Add uncooked elbow macaroni, stirring to coat. Cover and let simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Add Cheese and Meat: Reduce heat to low. Stir in cheddar cheese until melted and creamy. Return sausage and chicken to the skillet, stirring well.
