One-Pot Creamy Chicken Pasta Dinner

Description

This creamy, indulgent pasta dish combines juicy chicken, al dente pasta, and a velvety cream sauce. With minimal cleanup and full flavor, it’s the perfect comfort meal for busy weeknights or casual dinner parties.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz pasta (penne, rotini, or your choice)
  • 1 pint cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and cracked black pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and Italian seasoning, then sear until golden, about 5-6 minutes. Remove chicken and set aside.
  2. In the same pot, reduce heat and sauté garlic for 30 seconds until fragrant.
  3. Add chicken broth and bring to a simmer, scraping up any browned bits from the pot. Stir in heavy cream and return chicken to the pot.
  4. Stir in dry pasta, making sure it is mostly submerged. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente.
  5. Add the cherry tomatoes and spinach, cooking for 2-3 more minutes until spinach wilts and tomatoes soften.
  6. Turn off the heat and stir in grated parmesan. Taste and adjust seasoning with salt and pepper as needed.
