This creamy, indulgent pasta dish combines juicy chicken, al dente pasta, and a velvety cream sauce. With minimal cleanup and full flavor, it’s the perfect comfort meal for busy weeknights or casual dinner parties.
Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz pasta (penne, rotini, or your choice)
- 1 pint cherry tomatoes, halved
- 4 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and cracked black pepper to taste
- 1 teaspoon Italian seasoning
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and Italian seasoning, then sear until golden, about 5-6 minutes. Remove chicken and set aside.
- In the same pot, reduce heat and sauté garlic for 30 seconds until fragrant.
- Add chicken broth and bring to a simmer, scraping up any browned bits from the pot. Stir in heavy cream and return chicken to the pot.
- Stir in dry pasta, making sure it is mostly submerged. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is al dente.
- Add the cherry tomatoes and spinach, cooking for 2-3 more minutes until spinach wilts and tomatoes soften.
- Turn off the heat and stir in grated parmesan. Taste and adjust seasoning with salt and pepper as needed.
