Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups rigatoni, penne, or rotini pasta (uncooked)
  • 1 ½ cups shredded cheddar cheese
  • 4 oz cream cheese
  • 2 tbsp ranch seasoning mix
  • 3 cups chicken broth
  • 1 cup milk
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Salt & pepper, to taste
  • ¼ cup grated parmesan cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat butter in a large, deep skillet or pot over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6–8 minutes. Remove chicken and set aside.
  2. In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in chicken broth and milk. Add cream cheese and ranch seasoning, stirring until cream cheese is melted and mixture is smooth.
  4. Add uncooked pasta to the pot. Stir well, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and has absorbed most of the sauce.
  5. Return the cooked chicken to the pot and add shredded cheddar cheese. Stir until cheese is fully melted and incorporated.
  6. Optional: Transfer to an oven-safe dish, sprinkle parmesan cheese on top, and broil for 3–5 minutes until bubbly and golden brown.
  7. Garnish with freshly chopped parsley and serve hot.
