Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 cups rigatoni, penne, or rotini pasta (uncooked)
- 1 ½ cups shredded cheddar cheese
- 4 oz cream cheese
- 2 tbsp ranch seasoning mix
- 3 cups chicken broth
- 1 cup milk
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt & pepper, to taste
- ¼ cup grated parmesan cheese (optional, for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat butter in a large, deep skillet or pot over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 6–8 minutes. Remove chicken and set aside.
- In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in chicken broth and milk. Add cream cheese and ranch seasoning, stirring until cream cheese is melted and mixture is smooth.
- Add uncooked pasta to the pot. Stir well, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and has absorbed most of the sauce.
- Return the cooked chicken to the pot and add shredded cheddar cheese. Stir until cheese is fully melted and incorporated.
- Optional: Transfer to an oven-safe dish, sprinkle parmesan cheese on top, and broil for 3–5 minutes until bubbly and golden brown.
- Garnish with freshly chopped parsley and serve hot.
