Ingredients
- Pasta: 12 oz of uncooked penne or elbow pasta.
- Chicken Breasts: 2 medium-sized, boneless and skinless, diced.
- Olive Oil: 2 tablespoons.
- Garlic: 3 cloves, minced.
- Chicken Broth: 3 cups.
- Heavy Cream: 1 ½ cups.
- Cheddar Cheese: 2 cups, freshly grated.
- Parmesan Cheese: 1 cup, freshly grated, divided.
- Paprika: 1 teaspoon.
- Italian Seasoning: 1 teaspoon.
- Salt & Black Pepper: To taste.
- Breadcrumbs (Optional): ½ cup.
- Fresh Parsley: Chopped, for garnish.
Instructions
- Cook the Chicken: Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt, pepper, and Italian seasoning. Cook for 6–8 minutes until golden brown. Remove and set aside.
- Sauté Garlic: In the same pot, add minced garlic and cook for about 30 seconds until fragrant.
- Cook Pasta: Add chicken broth and bring to a simmer. Pour in uncooked pasta and cook for 10–12 minutes, stirring occasionally, until al dente.
- Prepare Cheese Sauce: Add heavy cream, cheddar cheese, and half of the Parmesan cheese. Stir continuously until melted and smooth. Return chicken to the pot, add paprika, and mix well.
- Add Topping (Optional): Sprinkle remaining Parmesan and breadcrumbs. Broil for 2–3 minutes until golden and crispy.
- Garnish & Serve: Sprinkle with fresh parsley and serve hot.
