Ingredients

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 pound ground beef

2 tablespoons taco seasoning

1 cup tomato sauce

1 can (14.5 oz) diced tomatoes

2 1/2 cups beef broth

2 1/2 cups rotini pasta, uncooked

2 cups shredded cheddar cheese

Salt and pepper to taste

Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent. Stir in minced garlic and cook for 30 seconds.

2. Add ground beef and cook until browned. Break it up as it cooks and drain excess fat if needed.

3. Stir in taco seasoning, tomato sauce, and diced tomatoes. Mix well.

4. Pour in beef broth and uncooked pasta. Stir to combine and bring to a boil.

5. Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.

6. Remove from heat and stir in shredded cheddar cheese until melted and creamy.

7. Garnish with toppings like cilantro, sour cream, or jalapeños if desired, and serve hot.

Notes

Use freshly shredded cheese for better melting and a smoother sauce.

Stir occasionally while simmering to prevent pasta from sticking or burning.

Adjust spice level by using hot or mild taco seasoning, or add chili flakes for extra heat.
