Ingredients
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 cups heavy cream
- 2 cups chicken broth
- 8 oz fettuccine pasta
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Season chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large pot over medium-high heat. Sear chicken until golden and cooked through. Remove and set aside.
- Lower heat slightly, add butter and garlic. Cook for 30 seconds until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Add fettuccine pasta. Stir frequently and cook until pasta is al dente, about 10–12 minutes.
- Stir in Parmesan cheese until melted and sauce is creamy.
- Return chicken to the pot and stir to combine. Let it warm through.
- Garnish with parsley and serve hot.
