Ingredients

  • 2 large chicken breasts (or thighs), cut into bite-sized pieces
  • 2 tablespoons olive oil (divided)
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 2 teaspoons smoked paprika (plus extra for seasoning chicken)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 8 ounces linguine (or pasta of choice)
  • 3 cups chicken broth
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Parmesan cheese, grated (optional)

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces. Season with salt, black pepper, and smoked paprika.
  2. Heat 1 tablespoon of olive oil in a large, deep skillet over medium-high heat. Add the chicken pieces and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the remaining olive oil. Sauté garlic for about 1 minute until fragrant, then add cherry tomatoes and cook until softened, about 3–4 minutes.
  4. Add additional smoked paprika and crushed red pepper flakes (if using). Pour in chicken broth and stir well. Bring the mixture to a simmer.
  5. Add the uncooked pasta to the skillet, stirring to coat. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  6. Return the cooked chicken to the skillet and toss with the pasta and sauce. Adjust seasoning if necessary.
  7. Remove from heat and garnish with fresh parsley and grated Parmesan cheese if desired. Serve hot and enjoy!
