Ingredients

  • 3 ripe bananas
  • 1/2 cup melted butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 to 3/4 cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large mixing bowl, mash the bananas until mostly smooth.
  3. Add melted butter, sugar, egg, and vanilla to the mashed bananas. Mix until well combined.
  4. Sprinkle baking soda and salt over the mixture, stir to incorporate.
  5. Add flour and gently fold it in until no dry spots remain.
  6. Fold in chocolate chips.
  7. Divide batter evenly among muffin cups, filling each about 3/4 full. Top with extra chocolate chips if desired.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
