4 cups whole milk, divided

1/4 teaspoon salt
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon freshly grated nutmeg (optional)
1/2 cup raisins (optional)
1 tablespoon unsalted butter
Instructions
1. Rinse the rice under cold water until the water runs clear, then drain thoroughly.
2. In a heavy-bottomed saucepan, combine the rinsed rice, 3 cups of milk, sugar, and salt. Bring to a gentle boil over medium heat, stirring often.
