Need a quick breakfast, healthy snack, or post-workout fuel? These *No-Bake Lemon Blueberry Protein Bites* check every box. They’re fresh, zesty, sweet, and packed with nutrients. You’ll love the bright citrus flavor paired with the juicy burst of blueberries. This easy recipe is made with wholesome ingredients like oats, almond butter, and protein powder—perfect for breakfast ideas, food prep, or snack lovers. Best of all, no baking required!

Ingredients

1 ½ cups old-fashioned rolled oats

½ cup natural almond butter

⅓ cup honey or maple syrup

½ cup vanilla protein powder

1 tablespoon chia seeds

1 tablespoon ground flaxseed

Zest of 1 lemon

1 tablespoon fresh lemon juice

½ teaspoon pure vanilla extract

¼ teaspoon sea salt

⅔ cup blueberries (fresh or thawed frozen)

Instructions

1. In a large bowl, mix oats, protein powder, chia seeds, ground flaxseed, and salt.

2. In a separate bowl, stir almond butter, honey/maple syrup, lemon zest, juice, and vanilla until smooth.

3. Pour wet ingredients into the dry and mix until a sticky dough forms.

4. Gently fold in blueberries without crushing them.

5. Scoop and roll into 1 to 1.5-inch balls.

6. Place on parchment-lined plate and refrigerate 30 minutes to set.

7. Store in an airtight container in the fridge for 1 week or freezer for 2 months.

8. Enjoy chilled for the best taste and texture.

Notes

Use plant-based protein powder and maple syrup for a vegan version.

If the mixture is too dry, add a teaspoon of lemon juice or syrup; if too wet, add oats.

Chilling helps the bites firm up and keeps the blueberries from bleeding.
