Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup plain breadcrumbs
- Salt and black pepper, to taste
- 6 tablespoons unsalted butter (divided)
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Slice chicken breasts horizontally or pound to an even 1/2-inch thickness.
- Season both sides of the chicken with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- Dredge each chicken piece in flour, dip in egg, then coat with breadcrumbs.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat.
- Sear the chicken for 3–4 minutes per side until golden and cooked through. Work in batches if needed.
- In the same skillet, melt the remaining butter and add minced garlic. Cook for about 1 minute.
- Add lemon juice, stir, and scrape the bottom of the pan to release browned bits.
- Return chicken to skillet, spoon sauce over top, and heat for a minute.
- Sprinkle with chopped parsley and serve immediately.
