Ingredients
Dry Ingredients:
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
Wet Ingredients:
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
For Rolling:
- 1/4 cup granulated sugar
Instructions
- Preheat & Prepare – Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients – In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt. Set aside.
- Cream Butter & Sugar – In a large mixing bowl, beat butter and brown sugar until light and fluffy (about 2-3 minutes).
- Add Wet Ingredients – Mix in egg, molasses, and vanilla extract until well combined.
- Combine Wet & Dry – Gradually add dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Shape & Coat – Scoop dough into 1-inch balls, roll in granulated sugar, and place on a lined baking sheet, spacing them 2 inches apart.
- Bake – Bake for 8-10 minutes until edges are set but centers are soft.
