Ingredients

4 cod fillets (about 6 oz each)

3 tablespoons white miso paste

2 tablespoons mirin

1 tablespoon soy sauce

1 tablespoon brown sugar

1 teaspoon sesame oil

1 teaspoon freshly grated ginger

1 clove garlic, minced

2 tablespoons chopped green onions

1 teaspoon toasted sesame seeds


Instructions

1. In a small bowl, mix together white miso paste, mirin, soy sauce, brown sugar, sesame oil, ginger, and garlic until smooth.

2. Place the cod fillets in a shallow dish or bag. Pour the marinade over them and coat evenly. Marinate for 30 minutes to 2 hours in the fridge.

3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.

4. Remove excess marinade from cod and place fillets on the baking sheet.

5. Bake for 12–15 minutes until cod flakes easily. Broil for the last 2 minutes for a golden glaze.

6. Transfer to plates, garnish with green onions and sesame seeds, and serve hot.


Notes

Pat the cod dry before marinating to help the glaze stick better.

Don’t over-marinate—2 hours is the maximum to avoid curing the fish.

Use parchment to keep the glaze from burning and sticking during baking.
