Ingredients

200g unsalted butter

200g semi-sweet chocolate

150g granulated sugar

100g brown sugar

3 large eggs

1 tsp vanilla extract

120g all-purpose flour

30g cocoa powder

1/2 tsp salt

150g Mint Aero chocolate bars

100g sweetened condensed milk

1/2 tsp mint extract


Instructions

1. Preheat oven to 175°C (350°F) and line an 8×8-inch baking pan with parchment paper.

2. Melt butter and semi-sweet chocolate together until smooth, then let cool slightly.

3. Whisk granulated sugar, brown sugar, and eggs until thick and glossy.

4. Mix in melted chocolate and vanilla extract until combined.

5. Sift in flour, cocoa powder, and salt, then gently fold into the batter.

6. Pour half of the batter into the prepared pan and spread evenly.

7. Layer Mint Aero chocolate pieces evenly over the batter.

8. Drizzle sweetened condensed milk and add mint extract if using.

9. Spread remaining batter carefully over the mint layer.

10. Bake for 25–30 minutes until edges are set and center is slightly soft.

11. Cool completely before slicing into squares and serving.
